Ingredients
  

  • 1/2 cup freeze-dried strawberries, crushed into powd
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  •  Pink or red colored sugar for decorating
  • Optional: powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and crushed freeze-dried strawberries.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll into balls.
  7. Place dough balls on the prepared baking sheets about 2 inches apart.
  8. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
  9.  Sprinkle the tops generously with pink or red colored sugar.
  10.  Bake for 10-12 minutes, or until edges are lightly golden.
  11. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  12. Optional: dust lightly with powdered sugar once cooled for a delicate finish.

Notes

  • The thick batter is normal; extra stirring helps incorporate ingredients well.
  • Refrigerating dough before baking can help ease portioning if you don’t have a cookie scoop.
  • Cookies are softer fresh but firm up as they cool for the perfect texture.
