Ingredients

  • 2 tablespoons olive oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme leaves
  • 1 ½ pounds unpeeled potatoes, cut into 1-inch chunks
  • 1 teaspoon kosher salt
  • ½ cup grated Parmesan cheese

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and dry baby potatoes. Cut larger ones in half.
  3. Toss potatoes with olive oil, then coat evenly with the parmesan mixture.
  4. Arrange in a single layer on the baking sheet and bake for 25-30 minutes, flipping halfway.
  5. Remove from the oven, let cool slightly, and serve warm.

Notes

these potatoes are a healthier alternative to deep-fried options, yet they retain all the crispiness and flavor you crave. Whether you’re serving them alongside a main course or enjoying them on their own, they’re guaranteed to be a hit!
Try different dipping sauces like bleu cheese, ketchup, queso, or honey mustard. Leftovers can be reheated in the oven for a quick snack.
Enjoy
