Slice each cinnamon roll into bite-sized pieces, about 1-inch thick.
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined. Dip each cinnamon roll bite into the egg mixture, coating all sides.
Place the coated bites onto the preheated skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through.
Remove from heat and transfer to a serving plate. Dust with powdered sugar if desired and serve warm with maple syrup for dipping.
