**Stuffed Pepper Casserole**

Ingredients:

* 1 lb ground beef (or ground turkey/chicken)
* 1 medium onion, diced
* 3 bell peppers (any color), diced
* 3 cloves garlic, minced
* 1 cup uncooked long-grain rice (white or brown)
* 2 ½ cups beef or chicken broth
* 1 (15 oz) can tomato sauce
* 1 (14.5 oz) can diced tomatoes (with juices)
* 2 tsp Italian seasoning
* 1 tsp smoked paprika (optional)
* 1 tsp salt (to taste)
* ½ tsp black pepper
* 1 ½ cups shredded cheddar or mozzarella cheese


Instructions:

1. **Cook the meat:**
In a large skillet or Dutch oven, brown the ground beef with onions until no longer pink. Drain excess grease if needed.
