**Steak Loaded Potato Bites**

These little bites are the perfect party appetizer—crispy potato rounds topped with juicy steak, melty cheese, and all your favorite loaded toppings.

Ingredients:

* 2 large russet potatoes, sliced into ½-inch rounds
* 2 tbsp olive oil
* 1 tsp garlic powder
* 1 tsp paprika
* Salt & black pepper, to taste
* 8 oz steak (sirloin, ribeye, or your favorite cut)
* 1 tbsp butter
* 1 cup shredded cheddar cheese
* 4 slices bacon, cooked & crumbled
* ¼ cup sour cream
* 2 green onions, thinly sliced

Instructions:

1. **Prepare Potatoes**: Preheat oven to 425°F (220°C). Toss potato rounds with olive oil, garlic powder, paprika, salt, and pepper. Arrange on a parchment-lined baking sheet.
2. **Roast**: Bake 20–25 minutes, flipping halfway, until golden and crispy on the outside.
3. **Cook Steak**: Season steak with salt & pepper. Heat a skillet over medium-high, add butter, and sear steak 3–4 minutes per side (or until desired doneness). Rest 5 minutes, then slice into small bite-sized cubes.
4. **Assemble**: Remove potatoes from oven. Top each round with cheese and return to oven 2–3 minutes until melted.
5. **Finish**: Add steak pieces on top, sprinkle with bacon, and drizzle with sour cream. Garnish with green onions.
