These fluffy, savory pancakes are a delightful twist on the classic breakfast favorite—perfect for a quick lunch, brunch, or even a light dinner! Packed with herbs, cheese, and optional veggies, they’re flavorful, easy to make, and endlessly customizable.

Ingredients:

1 cup all-purpose flour

1 tsp baking powder

½ tsp salt

½ tsp black pepper

1 tbsp fresh herbs (chives, parsley, or thyme), finely chopped

¼ cup grated cheese (cheddar, parmesan, or your favorite)

1 large egg

¾ cup milk (dairy or plant-based)

2 tbsp olive oil or melted butter

½ small onion, finely chopped (optional)

½ cup cooked vegetables (spinach, bell peppers, zucchini, etc.) (optional)

Instructions:

Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, salt, and pepper.

Add Herbs & Cheese:
Stir in the chopped herbs and grated cheese for extra flavor.

Prepare Wet Ingredients:
In another bowl, whisk the egg, milk, and olive oil (or melted butter) until smooth.

Combine Wet & Dry Mixtures:
Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are fine—overmixing makes pancakes tough!

Fold in Extras (Optional):
If using, add chopped onions or cooked veggies and fold them into the batter.

Cook the Pancakes:

Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or butter.

Pour ¼ cup batter per pancake and cook for 2-3 minutes per side, until golden brown and cooked through.

Serve & Enjoy!
Serve hot with:

A dollop of sour cream or Greek yogurt

A drizzle of hot sauce or sriracha

A fried or poached egg on top for extra richness

A side of fresh salad or roasted veggies

These savory, cheesy pancakes are soft, fluffy, and packed with flavor—perfect for any meal! Enjoy! 😊
