Make sauce: In the same skillet, add pineapple juice, soy sauce, honey, ginger, garlic, and vinegar. Bring to a simmer.
Thicken: Stir in cornstarch slurry. Cook until sauce thickens (2–3 minutes).
Combine: Return pork chops to skillet, add pineapple chunks, and spoon sauce over them. Reduce heat to low, cover, and cook 5–7 minutes until pork reaches 145°F (63°C).
Serve: Garnish with green onions and sesame seeds. Pairs well with rice or stir-fried vegetables.
