**Ingredients**
**For the fries:**
* 4 large russet potatoes, cut into fries
* 2 tbsp olive oil
* Salt and pepper, to taste
**For the surf & turf topping:**
* 8 oz cooked steak, thinly sliced (ribeye or sirloin works well)
* 8 oz cooked shrimp, peeled and deveined
* 2 tbsp butter
* 2 cloves garlic, minced
* 1 tsp paprika
* Salt and pepper, to taste
**Cheese sauce:**
* 1 cup shredded cheddar cheese
* 1/2 cup milk
* 1 tbsp butter
* 1 tbsp flour
**Optional toppings:**
* Green onions, sliced
* Crispy bacon bits
* Sour cream or ranch drizzle
**Instructions**
1. **Prepare the fries:**
* Toss the cut potatoes in olive oil, salt, and pepper.
* Bake at 425°F (220°C) for 25–30 minutes, flipping halfway, until golden and crispy.
2. **Cook the shrimp and steak:**
* In a skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
* Add shrimp, sprinkle with paprika, salt, and pepper. Cook until pink and opaque (about 3–4 minutes).
* Reheat or sear the steak slices just until warmed.
3. **Make the cheese sauce:**
* In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
* Gradually whisk in milk until smooth and thickened.
* Add shredded cheddar and stir until melted.
4. **Assemble the loaded fries:**
* Place fries on a serving platter.
* Top with steak slices and shrimp.
* Drizzle cheese sauce over everything.
* Add optional toppings: green onions, bacon bits, sour cream.
5. **Serve immediately** while hot and cheesy.
