For the filling:

2 cups cooked, shredded chicken (rotisserie works great)

1 can (4 oz) diced green chiles (mild or hot)

1/2 cup sour cream or Greek yogurt

1/2 tsp cumin

Salt & pepper to taste

1 cup shredded Monterey Jack or Pepper Jack cheese

For the sauce:

Optional: 1/4 cup cream cheese for extra richness

Other:

8 small flour or corn tortillas
