Grandma’s Peach Cobbler Pie

🛒 Ingredients:
For the Pie:
- 1 (9-inch) deep dish pie crust, homemade or store-bought (pre-baked for 5–7 mins)
- 6 cups fresh or frozen peaches, peeled & sliced (if using canned, drain well)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tbsp butter, diced into small pieces
- For the Cobbler Topping:
- 3/4 cup all-purpose flour
- 1/3 cup sugar
- 1 ½ tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
🧑🍳 Instructions:
1. Prepare the Filling
In a large bowl, toss the peaches with sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla.
Let sit for 10–15 minutes to draw out the juices.
2. Pre-Bake Pie Crust
Preheat oven to 375°F (190°C).
If using a raw crust, poke with a fork and pre-bake for 5–7 minutes until just set. Let cool slightly.
3. Assemble the Pie
Pour the peach mixture into the pre-baked pie crust.
Dot with the 2 tbsp of diced butter over the fruit.
4. Make the Cobbler Topping
In a medium bowl, mix flour, sugar, baking powder, and salt.
Spoon dollops of the batter evenly over the peaches — it will spread as it bakes.
5. Cool & Serve
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
🍑 Tips:
Want it spicier? Add a pinch of ground ginger or cardamom to the filling.
Make it rustic: Bake it in a cast iron skillet for that classic grandma’s kitchen feel.
