Garlic Butter Chicken with Mushrooms, Peppers & Mashed Potatoes

Ingredients
For the Chicken 🍗
2 chicken breasts
1 tbsp olive oil
1 tbsp butter
1 tsp garlic powder
Salt & pepper
Fresh parsley, chopped (for garnish)
For the Veggies 🍄🌶️
1 cup mushrooms, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, sliced
1 tbsp olive oil
1 clove garlic, minced
Salt & pepper
For the Mashed Potatoes 🥔
3 medium potatoes, peeled and cubed
2 tbsp butter
¼ cup milk
Salt & pepper
Instructions
Boil potatoes until tender, mash with butter, milk, salt, and pepper until creamy. In a skillet, cook chicken breasts with olive oil, butter, garlic powder, salt, and pepper until golden and cooked through, then remove. In the same pan, sauté onion, peppers, garlic, and mushrooms in olive oil until softened. Serve mashed potatoes with chicken on top, surrounded by sautéed veggies. Garnish with parsley.
Notes
Add a splash of cream to mashed potatoes for extra richness.
Swap chicken for turkey or pork chops.
Works well as a meal prep dish.
