Egg Salad Sandwich

Ingredients:

  • For the Egg Salad:
  • 1. 6 hard-boiled eggs, peeled and chopped
  • 2. 1/4 cup mayonnaise
  • 3. 1 teaspoon Dijon mustard
  • 4. 1 teaspoon lemon juice
  • 5. 1 tablespoon chopped chives (plus more for garnish)
  • 6. Salt and pepper to taste
  • For the Sandwich:
  • 1. 4 slices of bread (white or whole wheat)
  • 2. Lettuce, tomato, and/or spinach (optional)

Instructions:

*Step 1: Make the Egg Salad*

  • 1. In a medium bowl, combine chopped eggs, mayonnaise, Dijon mustard, lemon juice, and chopped chives.
  • 2. Mix well until all the ingredients are fully incorporated.
  • 3. Season with salt and pepper to taste.

*Step 2: Assemble the Sandwich*

  • 1. Lay out the slices of bread on a clean surface.
  • 2. Spread a layer of egg salad on each slice of bread.
  • 3. Add lettuce, tomato, and/or spinach if desired.
  • 4. Top with another slice of bread to complete the sandwich.

*Step 3: Serve and Enjoy!*

  • 1. Cut the sandwiches in half or into quarters.
  • 2. Serve immediately and enjoy!
