Easy No-Fry Zucchini Fritters

📝 Ingredients:

  • 2 medium zucchinis (grated)
  • 2 eggs
  • ½ tsp salt & black pepper (to taste)
  • ½ tsp dried mint or dill (optional, for a fresh twist)
  • 1 tbsp feta or cottage cheese (optional, for added flavor)

👨‍🍳 Instructions:

1️⃣ Preheat Oven
Preheat oven to 180°C (350°F).

2️⃣ Prepare Zucchini
Grate the zucchinis.

Squeeze out as much excess water as possible.
