Crockpot Barbecue Ribs
Ingredients:
2 racks of baby back ribs or St. Louis style ribs
1-2 tablespoons of olive oil
Salt and pepper (to taste)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 teaspoon chili powder (optional for heat)
1 cup of your favorite barbecue sauce (store-bought or homemade)
Instructions:
Prep the Ribs:
Remove the thin membrane on the back of the ribs by gently pulling it off with a paper towel for a better texture when cooked.
Cut the ribs into sections (usually 2-3 rib bones per section), making them easier to fit in the crockpot.
Season the Ribs:
Rub the ribs with olive oil, then season generously with salt, pepper, garlic powder, onion powder, smoked paprika, and chili powder (if using).
Make sure to coat both sides of the ribs.
Arrange in the Crockpot:
Place the seasoned ribs in the crockpot in a standing position if possible, or in layers if needed. You may need to curl the ribs around the sides of the crockpot if they don’t fit perfectly.
If you want, you can add some sliced onions or garlic to the bottom for extra flavor.
Cook:
Cover and cook on low for 6-8 hours or on high for 3-4 hours. The ribs are done when the meat is tender and easily pulls apart.
Add Barbecue Sauce:
About 30 minutes before serving, brush the ribs with barbecue sauce and continue cooking.
For extra caramelization, you can also broil the ribs in the oven for 3-5 minutes after applying the sauce.
Serve:
Once cooked, remove the ribs from the crockpot and brush with more barbecue sauce if desired.
Serve with your favorite sides, like coleslaw or cornbread.
