Creamy Shrimp Alfredo Lasagna
A decadent twist on classic lasagna, this dish layers tender lasagna noodles with creamy Alfredo sauce, juicy shrimp, and plenty of cheese for a rich seafood comfort meal.
Ingredients:
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 3 cups ricotta cheese (or cottage cheese)
- 1 egg
- ½ cup grated Parmesan cheese
- 3 cups shredded mozzarella cheese (divided)
- 2 cups heavy cream
- 1 cup milk
- ½ cup unsalted butter (1 stick)
- 1 cup Parmesan cheese (freshly grated)
- 2 tbsp fresh parsley, chopped
- 12 lasagna noodles, cooked al dente
- 1 lb shrimp, peeled & deveined (medium or large)
- ½ tsp crushed red pepper flakes (optional)
- Salt & black pepper, to taste
Instructions:
- Cook the shrimp
- In a skillet, melt 2 tbsp butter.
- Add onion and garlic, sauté until fragrant.
- Toss in shrimp, season with salt & pepper, and cook until pink (2–3 min per side). Remove and set aside.
2. Make Alfredo sauce
- In a saucepan, melt ½ cup butter.
- Add cream and milk, stirring until warm.
- Stir in 1 cup Parmesan cheese, whisk until smooth.
3. Mix ricotta filling
- In a bowl, combine ricotta, egg, ½ cup Parmesan, 1 cup mozzarella, and parsley. Mix well.
4. Assemble lasagna
- Spread a thin layer of Alfredo sauce on the bottom of a greased 9×13 baking dish.
- Layer noodles, ricotta mixture, shrimp, mozzarella, and sauce.
- Repeat layers, finishing with noodles, Alfredo sauce, and remaining mozzarella on top.
5 Bake
- Cover with foil and bake at **375°F (190°C) for 25 minutes
- Remove foil and bake an additional (15 minutes )until golden and bubbly.
6. Serve
Let rest for 10 minutes before slicing. Garnish with parsley and extra Parmesan.
