Creamy Chicken and Mushroom Bake

✨ One-dish meal with rich flavor and easy cleanup

🛒 Ingredients:

  • 4 boneless, skinless chicken breasts (or 6 thighs)
  • Salt & pepper, to taste
  • 1 tbsp olive oil or butter
  • 8 oz (225g) cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp dried parsley
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream (or half & half)
  • 1/2 cup grated Parmesan or shredded mozzarella (optional topping)

🧑‍🍳 Instructions:

1. Preheat the Oven
Preheat to 375°F (190°C).
Lightly grease a 9×13-inch baking dish or large ovenproof skillet.

2. Sear the Chicken  
Season chicken breasts with salt and pepper.
Heat oil in a skillet over medium-high.
Transfer to a plate (they’ll finish cooking in the oven).

3. Sauté the Veggies
In the same skillet, reduce heat to medium.
Stir in garlic, thyme, parsley, and cook 1 minute.

4. Make the Sauce
Sprinkle flour over the veggies and stir for 1 minute.
Slowly add chicken broth, stirring constantly to prevent lumps.
Season with additional salt and pepper to taste.

5. Assemble 
Place seared chicken into the prepared baking dish.
Pour the mushroom cream sauce over the chicken.

6. Serve
Garnish with chopped parsley or thyme.

Steamed green beans or roasted asparagus

🔁 Variations:

Make it low-carb: Skip the flour or use almond flour to thicken.
Make it cheesy: Mix 1/2 cup shredded cheese into the sauce for a creamier bake.
