Cranberry Pistachio Energy Bites

Ingredients:
1 cup rolled oats
1/2 cup pistachios, chopped
1/4 cup dried cranberries, chopped
2 tablespoons chia seeds
1/4 cup almond butter or peanut butter
2 tablespoons honey or maple syrup
1/2 teaspoon vanilla extract
Pinch of salt
Directions:
1️⃣ Mix the Dry Ingredients
In a large bowl, combine the oats, chopped pistachios, dried cranberries, and chia seeds.

2️⃣ Prepare the Wet Ingredients
In a separate bowl, stir together the almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and a pinch of salt until smooth.

3️⃣ Combine
Pour the wet mixture over the dry ingredients. Mix until fully combined and the ingredients stick together.

4️⃣ Shape into Bites
Roll the mixture into 1-inch balls, pressing firmly to shape them.

5️⃣ Chill
Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

6️⃣ Store & Enjoy
Transfer the bites to an airtight container and store them in the fridge for up to one week.
