Chicken & Potato Cutlets

**Ingredients:**

* 2 medium potatoes, boiled & mashed
* 1 cup cooked chicken, shredded (boiled or rotisserie)
* 1 small onion, finely chopped
* 2 green chilies, finely chopped (optional)
* 2 tbsp fresh coriander, chopped
* 1 tsp ginger-garlic paste
* ½ tsp cumin powder
* ½ tsp garam masala
* ½ tsp chili powder (adjust to taste)
* Salt & pepper to taste
* 1 egg (for binding + coating)
* ½ cup breadcrumbs (for coating)
* Oil for shallow frying

**Instructions:**

1. In a large bowl, combine mashed potatoes and shredded chicken.
2. Add onion, green chilies, coriander, ginger-garlic paste, and all spices. Mix well.
3. Beat one egg and mix half of it into the mixture (reserve the rest for coating).
4. Shape mixture into small patties/cutlets.
5. Dip each cutlet in beaten egg, then coat with breadcrumbs.
6. Heat oil in a skillet over medium heat. Shallow fry cutlets until golden brown and crispy on both sides.
7. Drain on paper towels.

**Serving Suggestion:**
Serve hot with mint chutney, ketchup, or garlic mayo. Perfect as a snack, side dish, or sandwich filling!
