**Classic Curried Sausages**
**Ingredients:**
* 2 tbsp butter or oil
* 8 beef or pork sausages
* 1 large onion, sliced
* 2 cloves garlic, minced
* 2 medium carrots, sliced
* 1 apple, peeled and diced (optional, for sweetness)
* 2 tbsp mild curry powder
* 2 tbsp plain flour
* 2 cups beef or chicken stock
* 1 cup milk (or coconut milk for creaminess)
* 1 tbsp tomato paste
* 1 tbsp Worcestershire sauce
* 1 cup frozen peas
* Salt & pepper to taste
* Fresh parsley, for garnish
**Instructions:**
1. In a large skillet or pot, brown sausages in a little oil until golden. Remove and slice into chunks.
2. In the same pan, add butter/oil, then sauté onion, garlic, and carrots until softened.
3. Stir in curry powder and flour, cooking for 1 minute until fragrant.
4. Slowly whisk in stock and milk, stirring to avoid lumps.
5. Add tomato paste, Worcestershire sauce, and apple (if using). Simmer for 5 minutes.
6. Return sausages to the pan and cook on low heat for 15–20 minutes, until sauce thickens.
7. Stir in peas, season with salt and pepper, and cook another 2 minutes.
8. Garnish with fresh parsley and serve hot.
