🌮 Stovetop Taco Soup

🕒 Ready in: 25–30 minutes
🍽️ Servings: 6–8
🥣 One pot!

🛒 Ingredients:

  • 1 lb ground beef (or ground turkey for leaner option)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes (with green chilies, if you like it spicy)
  • 1 (8 oz) can tomato sauce
  • 2–3 cups beef or chicken broth, depending on how thick you like it
  • 1 packet taco seasoning (or use homemade – see below)
  • Salt & pepper, to taste

Optional toppings: shredded cheese, sour cream or Greek yogurt, crushed tortilla chips, avocado, green onions, lime wedges, jalapeños

🔥 Instructions:

Brown the meat:

In a large soup pot or Dutch oven, cook ground beef and onion over medium heat until beef is browned and onions are soft. Drain excess grease.
Add garlic and cook for 30 seconds, until fragrant.

Add remaining ingredients:

Stir in beans, corn, diced tomatoes, tomato sauce, broth, and taco seasoning. Bring to a simmer.
Simmer uncovered for 15–20 minutes to let the flavors blend. Add more broth if needed.

Taste and adjust:

Add salt, pepper, or extra seasoning to taste.
Serve hot with your favorite toppings!
🌿 Homemade Taco Seasoning (optional):

Mix together:

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)Salt and black pepper to taste

🧊 Storage:

Fridge: Keeps well for up to 4 days
Freezer: Freeze in airtight containers for up to 3 months
Reheat: Gently on stovetop or in microwave
