Grilled Halloumi Veggie Bowl
Ingredients:
8 oz halloumi cheese, sliced
1 zucchini, sliced
1 red bell pepper, sliced
1 cup cherry tomatoes
1 tablespoon olive oil
Salt and pepper, to taste
1 cup cooked quinoa or couscous
½ avocado, sliced
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley or mint
Directions:
Preheat grill or grill pan to medium-high. Toss zucchini, bell pepper, and cherry tomatoes in olive oil, salt, and pepper.
Grill vegetables for 4–5 minutes per side until tender and charred. Grill halloumi slices for 2–3 minutes per side until golden brown.
In a bowl, layer quinoa or couscous, grilled vegetables, and halloumi. Top with avocado slices, a drizzle of lemon juice, and fresh herbs.
Serve warm or at room temperature for a vibrant, satisfying bowl.
